Peppy Tomato Oats Sandwich

Peppy Tomato¬†Oats Sandwich recipe is made using the potato filling that we use for Masala Dosa’s. A lot of times I do consciously try to make an extra portion of the spicy potato filling so that making sandwiches for breakfast or for a school lunch box makes it a breeze.

INGREDIENTS :

  • 12 slices of bread
  • Butter for toasting/ grilling
  • 2 tomatoes, thinly sliced
  • 1 onion, sliced (rings)
  • 3 potatoes, coarsely mashed
  • 1 packet Saffola Masala Peppy Tomato Oats
  • 1 teaspoon ginger, grated
  • 2 green chillies, finely chopped
  • 1/4 teaspoon turmeric powder
  • 5 to 6 curry leaf, finely chopped
  • A small bunch of coriander leaves, finely chopped
  • Salt to taste
  • 1 teaspoon Oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal
  • 1 teaspoon channa dal
  • 1/4 teaspoon hing

COOKING STEPS :

1.Heat the oil in a heavy bottomed pan; add mustard seeds, urad dal, channa dal and allow it to roast until lighty browned

2.Once browned, add ginger, curry leaves, green chillies and hing. At this stage add turmeric powder, salt and potatoes, and oats

3.Stir well until all the ingredients are well combined

4.Cover the pan, turn the heat to low and simmer for a few minutes. Once done, turn off the heat. The filling is ready. Keep aside

For the Sandwich

 

1.Place a slice of bread on a flat surface, spoon a small amount of potato filling on top of the slice and spread it around

2.Place a couple or 1 large slice of the tomato and a few onion rings on top.

3.Optionally sprinkle some salt or pepper and cover with the other slice of bread

4.Press the sandwich down with the palm of your hands

5.Preheat a skillet or a grill pan, you can now optionally apply butter on the top facing slice

6.Place the sandwich on the preheated skillet such that the buttered side faces down

7.Now optionally apply butter on the top side. Using a spatula, press the sandwich down so it grills evenly and the filling stays in.

8.Flip over and grill on the other side until crisp and lightly browned
